Whisky apples with ginger ice cream

    full cream milk

    minced fresh ginger

Method

 
WHISKY APPLES: Heat butter in a frying pan until golden, add apples (sliced into eighths) and sauté for 1 to 2 minutes. Sprinkle with sugar, add orange peel and cinnamon stick and stir in orange juice and whisky. Cover with a lid and simmer gently until apples have softened. Remove lid, increase heat and cook briskly to reduce sauce. ICE CREAM: In a large mixing bowl stir together all ingredients (unwhisked), until sugar dissolves. Pour into a freezer container and freeze for 1 to 2 hours or until starting to firm. Place in a food processor fitted with a steel blade and process for 30 seconds. Freeze for 1 to 2 hours, then process again for 30 seconds. Transfer to a serving bowl and freeze until needed.
