  • Salad
  • 500
    g
    wheat kernels or pearl barley
  • 340
    g
    whole-kernel mealies
  • 1
    onion
  • 1
    green pepper
  • 50
    ml
    parsley
  • salt and freshly ground black pepper
  • Salad dressing
  • 50
    ml
    wine or grape vinegar
  • 30
    ml
    olive oil
  • 25
    ml
    lemon juice
  • 1
    clove garlic, crushed
  • salt and freshly ground black pepper
 

Method

 
Boil the wheat in water until tender. Drain well.
Rinse under cold running water.
Add the remaining salad ingredients and season with salt and pepper to taste.
Blend the salad dressing ingredients and pour over the salad.
Chill until needed.
