Wheat salad

  • 200
    g
    wheat, soaked in water
  • salt and freshly ground black pepper
  • 75
    ml
    lemon juice
  • 100
    ml
    olive oil
  • 125
    ml
    chopped fresh parsley
  • 45
    ml
    chopped fresh mint
  • 5
    spring onions, finely chopped
  • 4
    tomatoes, diced
 

Method

 
Drain the wheat and boil in fresh water until tender. Drain. Transfer to a fairly large glass bowl, season generously with salt and pepper and add the remaining ingredients. Mix well, cover and chill until just before serving. Serves 10.
