    wholegrain or Dijon mustard
  • fresh coriander or mint

Method

 
Stir-fry the almond flakes in a dry pan until golden brown.
Remove from the pan.
Melt the butter and stir-fry the onions with the spices until tender.
Cook the pearl wheat in chicken stock until tender, adding the raisins about 5 minutes before the end of the cooking time so they can plump up.
Drain and mix with the almond and onion mixture.
Mix all the ingredients for the dressing and pour over the wheat mixture while still hot.
Cool and store in the fridge until needed.
Garnish with fresh herbs.
