Ingredients (11)

800.00 g hake — frozen fillets
salt and freshly ground black pepper — to taste
lemon juice
30.00 ml brown sugar
100.00 ml flour — cake
100.00 ml butter
100.00 ml oil
TOPPING
200.00 ml mayonnaise
100.00 g cheddar cheese — grated
10.00 ml mustard — powder
3.00 eggs — whites only, whisked

Method:

Preheat the oven to 180ºC (350 ºF). Season the hake fillet with salt and pepper to taste and sprinkle with a little lemon juice. Combine the brown sugar and cake flour and roll each fish portion in the mixture. Place the butter in a flat ovenproof dish and add the oil. Place in the oven and tilt until the butter has melted. Roll each fish fillet in the butter mixture, ensuring that the fillets are coated all round. Bake for about 20-30 minutes or till the fish flakes easily with a fork and no longer appears glassy. Mix all the ingredients for the topping and spoon over the fish. Place the dish underneath the heated oven grill and heat till the topping is browned and puffed up. Serve immediately.
