Welsh rarebit with ale, apple and walnuts

    g
    butter
  • 500
    g
    firm white cheese, grated
  • 1
    apple, thinly sliced
  • 85
    ml
    ale
  • 2
    ml
    mustard powder
  • few drops Worcestershire sauce
  • pinch cayenne pepper
  • salt
  • 4
    slices crusty bread
  • 60
    g
    chopped walnuts
 

Method

 
Melt butter in a small saucepan. Remove from heat, then add cheese, apple slices, ale, mustard, Worcestershire sauce and cayenne pepper. Season with salt and heat gently for a moment until beginning to melt. Remove from heat. Toast bread and divide cheese mixture between slices. Place under a hot grill until golden and bubbling. Sprinkle with chopped walnuts. Serve hot.
