Ingredients (8)

1 salmon — tinned, drained and flaked
2 potatoes — medium, boiled, peeled and sliced
1 eggs — large, lightly beaten
30 ml fresh parsley — chopped
lemon — zest only
30 ml flour
50 ml breadcrumbs — dried
oil — for frying

Method:

Place the salmon, potato, half of the egg, parsley and lemon zest in a large bowl. Use your hands to mix together well. Shape the mixture into eight to 12 balls and place onto a plate or baking sheet. Place in the freezer for a few minutes to firm.

Remove from the freezer and roll in the flour, followed by the remaining egg and the breadcrumbs to form a coating. Heat the oil in a frying pan and fry in two batches for about two minutes on each side. Serve with potato wedges and salad.
