    sugar

    extra-large eggs

    cream cheese
  • 1
    grated rind and juice of a small lemon
  • 250

    seedless raisins

    self-raising flour
  • pinch salt
  • little milk if necessary
 

Method

30-45 min
 
Preheat the oven to 180 ºC and spray a 26 x 9 cm loaf tin with non-stick spray. Cream the butter and sugar and beat in the eggs one by one. Whisk the cream cheese, lemon rind and juice, and raisins and sift the flour and salt on top. Mix, adding a little milk if the mixture is too stiff and sticky. Turn the batter into the prepared loaf tin and bake for 30-45 minutes or until done. Cover with aluminium foil for the last 15 minutes if the crust becomes too dark. Cool slightly in the tin before turning out. Cool completely, slice and serve with butter and conserve. Makes 1 large loaf.
