Dressing:
2.00 lime — zest only
1.00 orange — juice only
sea salt and freshly ground black pepper
Salad:
2.00 watercress
1.00 watermelon — small, cubed
250.00 ml pecan nuts — or pine nuts, toasted
100.00 g gorgonzola cheese — or feta cheese, crumbled

Method:

Whisk together the dressing ingredients.
Place washed watercress in a bowl and pour over dressing. Don’t leave the watercress in the dressing for longer than 10 minutes before serving. Arrange a bed of watercress on each plate and top with remaining ingredients.
