Watercress, orange and avocado salad

Ingredients

    apple juice
  • 65
    ml
    fresh lime juice
  • 15
    ml
    minced and seeded green chillies
  • 65

    olive oil
  • 1
    red or white onion, grated
  • 10
    ml
    crushed garlic
  • 15
    ml
    chopped fresh coriander
  • Salad:
  • 4
    large navel oranges
  • 2
    large avocados, peeled, pitted, cut lengthwise into 4cm-thick slices
  • 5
    spring onions, cut into thin matchstick-size strips
  • 3
    large bunches watercress, thick stems trimmed
 

Method

1. For the dressing: whisk together all the ingredients in a small bowl and refrigerate until needed.
2. For the salad: Cut off all peel and white pith from oranges and slice.
3. In a large bowl arrange orange slices and avocado in a circular pattern.
4. Pile watercress and spring onions in the centre.
5. Sprinkle with dressing and serve.
