Watercress and rocket sauce

    ml
    olive oil
  • 1
    onion, finely chopped
  • 100
    g
    rocket
  • 75
    g
    watercress
  • 200
    ml
    sour cream
  • nutmeg, grated
  • coarse black pepper and salt
  • cooked ribbon pasta, pappardelle or tagliatelle
  • Parmesan cheese shavings
 

Method

15 minutes
 

Heat olive oil and fry onion until soft.
Add rocket and watercress and sauté until the leaves start to wilt.
Process with sour cream and nutmeg, pepper and salt.
Toss with cooked ribbon pasta such as pappardelle or tagliatelle and top with Parmesan.

Delicious as a light meal with a glass of chilled white wine.
