    oil
  • 1
    onion, grated
  • 2
    potatoes, grated
  • 2
    Litres
    boiling water
  • 3
    chicken stock cubes
  • 6
    cans waterblommetjies
  • pepper
  • 5
    ml
    lemon rind, grated
  • cream to serve
 

Method

 
Heat the oil in a large saucepan and sauté the onion until soft. Add the potatoes, boiling water and chicken stock cubes and boil until the potatoes are soft. Add the waterblommetjies, season with pepper and lemon rind, bring to the boil and then simmer. Pour the mixture into a food processor and purée. Serve in soup bowls and garnish each serving with a swirl of cream. Makes 3 litres.
