    fresh or canned waterblommetjies, drained
  • 1
    each green and red pepper, cored, seeded and sliced
  • 2
    medium onions, sliced
  • 500
    g
    carrots, topped, tailed, scraped and cooked until just tender
  • 500
    g
    cauliflower florets, cooked until just tender
  • DRESSING
  • 250
    ml
    olive oil
  • 150
    ml
    vinegar or lemon juice
  • 50
    ml
    sugar
  • 6
    garlic cloves, crushed
  • 5
    ml
    pinch of herbs, dried
  • salt and freshly ground black pepper
 

Method

 
1. To prepare the dressing, shake all the ingredients in a screw-top jar vigorously until thoroughly mixed. 2. Place the vegetables in a large salad bowl and pour the dressing over. Chill in the refrigerator for 2 days.
