  • PASTRY

    butter or margarine
  • 250
    ml
    cake flour
  • 250
    ml
    cheese, grated
  • FILLING
  • 750
    g
    fresh waterblommetjies
  • 1
    lemon, juice
  • 250
    ml
    cream
  • 125
    g
    Brie or Camembert cheese, finely sliced
  • 3
    extra-large eggs
  • Parmesan cheese
 

Method

 
1. Combine all pastry ingredients and process until a stiff ball is formed. Press dough into a 26 cm quiche dish, cover with foil and bake at 200 ºC for about 12 minutes. Remove foil to allow crust to crisp. 2. Place small pieces of Brie or Camembert on pastry base and cover with 500 g waterblommetjies. 3. Purée remaining 250 g waterblommetjies with 100 ml cream until smooth and spread over crunchy waterblommetjies. 4. Whisk eggs with the remaining cream and pour over. Sprinkle with Parmesan cheese. 5. Cover with foil and bake for 45 minutes, removing foil for last 5 minutes to brown.
