    canned or fresh waterblommetjies, drained
  • 10
    ml
    melted butter
  • 10
    ml
    Cheddar cheese, finely grated
  • 1
    small onion, grated
  • 250
    ml
    white breadcrumbs
  • 50
    ml
    flour
  • 2
    small eggs
  • salt and freshly ground black pepper
  • oil for frying
 

Method

 
1. Combine and process waterblommetjies, butter, cheese, onion, 190 ml breadcrumbs, flour, 1 egg and seasoning. Cool in refrigerator. Shape small fritters 1 cm thick, and roll in flour. 2. Beat remaining egg with a little water. Dip fritters in mixture and roll in remaining breadcrumbs. Fry in hot oil until golden brown. 3. Serve as a light meal with olives, cheese and a glass of white wine. The fritters also go well with roast meat. Cooked mincemeat may be added to mixture before forming fritters.
