    kg
    fresh waterblommetjies, thoroughly washed and stems removed if necessary
  • 2
    kg
    stewing mutton, such as neck or rib, cut into pieces
  • salt and black pepper
  • 2
    onions sliced
  • 250
    ml
    water
  • 12
    baby potatoes
  • large cooking apple, chopped
  • 250
    ml
    white wine
 

Method

 
Soak the waterblommetjies in salted water for a few hours. Drain, rinse and bring to a rapid boil in fresh water. Drain. Season the meat with salt and pepper and brown in a heated black pot or heavy-based saucepan. Add the onions and stir-fry until glossy. Add the water, cover and simmer slowly until partially cooked. Add the potatoes, waterblommetjies and apple, pour over the wine and simmer until the potatoes and waterblommetjies are cooked and tender. Season with salt and pepper. Do not stir too frequently as the waterblommetjies will become mushy. Serve with samp or rice.
