Water chestnuts with chilli mayonnaise

    rashers streaky bacon (not too fatty)

    water chestnuts
  • CHILLI MAYONNAISE
  • 65
    ml
    chilli sauce
  • 65
    ml
    mayonnaise
  • 125
    ml
    sugar
 

Method

 
Wrap the bacon rashers around the water chestnuts and secure the rashers with strong toothpicks. Arrange the wrapped water chestnuts in a buttered baking dish and bake for 45 minutes at 180 ºC. CHILLI MAYONNAISE: Blend all the ingredients, dot over the water chestnuts and bake for a further 20 minutes.
