Ingredients (6)

800.00 g warthog — cutlets
1.00 eggs — large, lightly beaten
125.00 g parmesan cheese — grated
25.00 ml sunflower oil
200.00 g green beans
125.00 g bacon — streaky, rindless

Method:

1. Dip the warthog cutlets into the egg and then into the Parmesan.

2. Heat the sunflower oil in a frying pan over a medium heat. Fry the crumbed cutlets until golden brown on both sides and cooked through.

3. Boil the beans in a little lightly salted water for about six minutes, until just tender. Remove from the heat and drain. Make small bundles of beans and roll each one in a strip of bacon. Place on a greased baking tray and cook in a preheated oven or under a medium-hot grill until the bacon is cooked. Serve with the cutlets and potato rösti or any other potato dish.
