Warm spinach salad with egg and bacon

  • SALAD DRESSING
  • 60
    ml
    olive oil
  • 20
    ml
    lemon juice
  • 10
    ml
    wholegrain mustard
  • 250
    g
    bacon
  • 2
    cloves garlic, crushed
  • 24
    cherry tomatoes (red and/or yellow)
  • 300
    g
    spinach, shredded
  • 4
    hard-boiled eggs, sliced
  • 8
    fresh basil leaves, finely chopped (optional)
  • pinch nutmeg
 

Method

 
Blend the olive oil, lemon juice and mustard. Set aside. Fry the bacon until crisp and cut into pieces. Sauté the garlic and cherry tomatoes in the pan fat until glossy, odd the spinach and stir fry for a few minutes. Add a little olive oil if necessary. Mix the bacon, spinach, tomatoes, eggs and basil in a large mixing bowl and season with nutmeg. Transfer to a serving bowl and pour over the salad dressing. Serve warm. Serves 4-6.
