Ingredients (6)

1.00 salad greens
3.00 carrots — peeled and cut into thin strips
5.00 ml french mustard
15.00 ml lemon juice
25.00 ml fresh mixed herbs — chopped
400.00 g mixed seafood

Method:

1. Mix together the salad leaves and carrot strips in a salad bowl.
2. Place the mustard into a small bowl and stir in the lemon juice. Add oil, as you whisk, to form a smooth dressing. Stir in the fresh herbs.
3. Bring a saucepan of water to the boil. Add the seafood and boil for one minute. Drain and add to the salad bowl. Add the dressing and toss. Serve immediately with fresh, crusty bread.
