Warm sausage salad

    baby potatoes

    pork sausages
  • 200
    baby spinach
  • 50
    good-quality mayonnaise
  • 30
    red wine vinegar
  • 3
    spring onions, sliced

1. Boil the potatoes in salted water for 15 minutes or until tender. Place the sausages under the grill for about 10 minutes until golden brown and cooked through, turning regularly to ensure they brown evenly. Remove from the oven, then slice into large chunks.

2. Drain the potatoes, then set aside to cool slightly. Cut into halves, mix with the sausage and add the spinach.

3. Whisk the remaining ingredients and season to taste. Pour over the salad and toss to coat.
