Warm prawn salad

Ingredients

  • 400
    g
    shelled prawns
  • olive oil for frying
  • thinly sliced lemon peel to taste
  • crushed garlic to taste
  • 16
    mange tout or green beans
  • sprigs of Italian flat leaf parsley
  • lemon juice for drizzling
 

Method

5 minutes
 
Pan-fry shelled prawns in hot olive oil for two minutes.
Add the lemon peel, garlic and mangetout or green beans.
Toss with parsley and drizzle with lemon juice.
This makes a posh spring starter.
