Warm potato and broccoli salad

  • olive oil for sautéeing (optional)

    baby potatoes, parboiled

    cloves garlic, sliced
  • salt and milled pepper

    broccoli, broken into florets
  • 150

    feta cheese
  • 1
    mild-flavoured red onion, chopped
  • DRESSING
  • olive oil
  • white wine vinegar or balsamic vinegar
  • salt and milled pepper
 

Method

 
Heat oil in a large frying pan. Add potatoes (peeled or unpeeled, as desired) and garlic, and sauté over moderate heat until crisp and golden. Season with salt and pepper. Meanwhile, steam or boil broccoli in a little water until cooked but still crisp and bright green. Don't overcook. Toss all cooked vegetables together in a bowl. Carefully stir in crumbled feta cheese and onion. DRESSING: Drizzle oil and vinegar over salad and season to taste. Serve warm.
