Ingredients (11)

stock — chicken
8.00 leeks — rinsed
parmesan cheese — shavings
VINAIGRETTE
250.00 ml fresh chillies — 573
30.00 ml vinegar — white wine
30.00 ml vinegar — balsamic
5.00 ml wholegrain mustard
2.00 ml mustard — powder
5.00 ml mayonnaise
2.00 ml sugar
salt and freshly ground black pepper — to taste

Method:

Bring, chicken stock to boil, add leeks and cook until just soft, about 8 minutes.
Meanwhile, whisk vinaigrette ingredients together.
Drain leeks and arrange on a platter. Pour vinaigrette over still-warm leeks.
Top with shavings of Parmesan cheese and serve.
