Ingredients (12)

45.00 ml brown sugar — soft
600.00 ml water
65.00 ml honey
5.00 ml cinnamon — ground
5.00 ml nutmeg — ground
2.00 cloves — whole
30.00 ml lemon juice
30.00 ml brandy
24.00 apricots — dried
820.00 g peaches — tinned halves, drained
80.00 ml sultanas
gooseberries — to garnish

Method:

Heat the sugar and water over low heat until the sugar has dissolved and stir in the honey, cinnamon, nutmeg, cloves, lemon juice and brandy. Bring to the boil and reduce the heat. Add the apricots, cover and simmer for 15 minutes.
Halve the peach halves and add to the saucepan along with the sultanas. Simmer for five minutes.
Remove the cloves and transfer the fruit to a pretty glass bowl. Decorate with fresh gooseberries and serve hot with a scoop of yoghurt, whipped cream or ice cream and sweet crunchy biscuits.
