Warm beetroot and orange salad with feta

    6 medium beetroot
  • 0
    2 oranges
  • 0
    2 rounds of feta
  • 0
    1 packet of baby spinach or salad leaves
  • 0
    2 T honey
  • 0
    2 T balsamic vinegar
  • 0
    1 T brown sugar
  • 0
    100ml apple, grape or berry juice
  • 0
    1 T olive oil
  • 0
    Salt and pepper to season
 

Method

Peel the beetroot and cut into small wedges.
Steam for 15 minutes in a steamer.
Peel the oranges and cut into 1cm rounds. Place the oil, balsamic, honey, juice and sugar into a pan with the beetroot and simmer on a low heat for 5-10 minutes, or until the sauce thickens.
Place the oranges into the pan for a few minutes as well to warm though.
Arrange the leaves in a bowl and pour over the warm beetroot and oranges.
Crumble the feta over the top and serve immediately.
Season to taste before serving.
