Ingredients (13)

1.00 beef fillet
salt
30.00 ml Dijon mustard
10.00 ml soy sauce
10.00 ml fresh chillies — 573
45.00 ml vinegar — balsamic
freshly ground black pepper — to taste
olive oil
lettuce — mixed salad greens

410.00 g mixed berries
190.00 ml vinegar — red wine
30.00 ml honey
30.00 ml brown sugar

Method:

Season the fillet with salt and rub in gently.
Mix the mustard, soy sauce and olive oil and brush the fillet with the mixture. Leave for 30 minutes.
Sprinkle the meat with the balsamic vinegar, rubbing it in slightly, and leave for another 15 minutes.
Meanwhile prepare the sauce: simmer all the sauce ingredients for 5 minutes and leave to cool.
Pat the fillet dry with paper towels. Sprinkle the meat with black pepper.
Heat a little olive oil in a pan until very hot and cook the fillet until done and golden brown on the outside but still slightly pink inside – 15 to 20 minutes, depending on the thickness of the fillet.
Wrap the meat in aluminium foil and leave to rest for 15 minutes. Slice into paper thin slices.
Spoon a little of the berry sauce on each plate and arrange slices of the fillet in the centre of the plate.
Top with mixed salad greens and drizzle with more olive oil.
