Warm smoked salmon salad with lemon potatoes

    baby Mediterranean potatoes, quartered

    sea salt
  • Zest and juice of 2 lemons
  • 2

    chicken stock
  • 1/4
    cup
    olive oil
  • 1
    tsp
    thyme leaves
  • 1
    large head butter lettuce
  • 200
    g
    smoked salmon, cut into strips
  • 100
    g
    Danish feta, crumbled
  • 1/4
    cup
    caper berries
  • 30
    g
    flatleaf parsley, chopped
  • Black pepper
  • DRESSING:
  • 1/4
    cup
    olive oil
  • 2
    Tbs
    lemon juice
  • 2
    Tbs
    wholegrain mustard
  • 1
    pinch
    sugar
  • Sea salt and black pepper
 

Method

Place potatoes in a large, shallow pan with salt, lemon juice and zest, and chicken stock. Simmer partially covered over a low heat until cooked through and liquid has almost evaporated. Add olive oil, increase heat and sauté potatoes with thyme for 2 minutes.

Remove pan from heat and allow to cool slightly. Add lettuce, salmon, feta, caper berries and parsley to the pan. Season with black pepper. Combine dressing ingredients in a small bowl and drizzle over salad. Toss well to combine.
