Warm salad of feta, prawns and pita

    olive oil
  • 1/2
    red onions, sliced
  • 3
    cloves garlic, finely chopped
  • 1/2
    tsp
    dried oregano
  • 400
    g
    fresh cherry tomatoes
  • 200
    g
    prawns, heads removed, tails on
  • 100
    g
    feta, crumbled
  • Salad leaves
  • Sea salt and black pepper
  • 1
    pita bread, halved, toasted and
  • cut into wedges, to serve
  • FOR THE DRESSING:
  • 1/2
    cup
    olive oil
  • 2 1/2
    tsp
    sherry vinegar
  • 1
    tsp
    sugar
  • Pinch of chilli
  • Fresh oregano leaves
  • Sea salt and black pepper
 

Method

Heat olive oil in a pan, add onions and garlic and sauté until golden; stir in oregano. Toss in cherry tomatoes, and sauté for 2 min, stir through prawns and sauté for another 2 minutes, or until cooked through. Season.

For the dressing:
Whisk together all ingredients.

To serve:
Toss together prawn mixture, salad leaves, dressing and feta. Divide between four plates and serve with toasted pita wedges.
