Walnut macaroons

Ingredients

    medium egg whites
  • 125
    ml
    castor sugar
  • 150
    ml
    finely chopped walnuts
  • 45
    ml
    ground almonds
  • 5
    ml
    cornflour
  • extra chopped walnuts for decorating
  • ICING
  • 50
    ml
    margarine
  • 190
    g
    icing sugar
  • 15
    ml
    coffee powder dissolved in
  • 15
    ml
    vanilla essence
 

Method

40 minutes
 
Preheat the oven to 160 °C and line a baking sheet with baking paper.
Whisk the egg whites lightly, adding the castor sugar by the spoonful.
Fold in the nuts and cornflour using a metal spoon.
Drop small teaspoonfuls of the mixture on the baking sheet, leaving enough space between them for the macaroons to spread.
Decorate with chopped walnuts and bake for 40 minutes or until done.
Cool completely.
To make the icing, beat all the ingredients together and use to sandwich the macaroons together.
