Waldorf pasta salad

    small onion, sliced
  • 250

    pasta shapes
  • 30
    ml
    French salad dressing
  • salt and freshly ground black pepper
  • 2
    stalks celery, sliced
  • 2
    red apples, cored and thinly sliced
  • 1
    juice of a lemon
  • 80
    ml
    seedless raisins
  • 50
    g
    walnuts, coarsely chopped
  • SALAD DRESSING
  • 45
    ml
    mayonnaise
  • 45
    ml
    cream
  • little milk (optional)
  • 1
    head lettuce, rinsed and broken into smaller pieces
 

Method

 
Soak the onion slices in water for 30 minutes to remove the sharpness. Meanwhile cook the pasta until done and drain. Pour over the French salad dressing and season generously with salt and pepper. Leave to cool completely. Mix the rest of the ingredients with the cold pasta. Whisk together the salad dressing ingredients and dilute with a little milk if necessary. Mix everything together and chill slightly. Arrange the lettuce leaves in a bowl, add the salad ingredients and garnish with lettuce leaves. Serves 4-6.
