Waffles with fruit

    ml
    cake flour
  • 5
    ml
    baking powder
  • pinch of salt
  • 15
    ml
    sugar
  • 1
    egg, separated
  • 30
    ml
    melted butter
  • 150
    ml
    milk
  • maple syrup, cheese and stewed or fresh fruit for serving
 

Method

 
Sift together the dry ingredients and add the sugar.
Make a well in the centre and pour in the egg yolk and butter. Mix lightly.
Gradually stir in the milk, then whisk until a smooth batter is formed.
Whisk the egg white until stiff peaks begin to form and fold into the batter.
Drop large spoonfuls of the batter onto a hot greased waffle pan and cook until brown and done.
If you don't have a waffle pan, drop spoonfuls of the batter into a heavy-based saucepan and brown on both sides.
Metal cookie cutters may be used to achieve interesting shapes: place the cookie cutters in the pan and spoon the batter inside.
Serve the waffles with maple syrup, cheese and fruit.
