    buttermilk

  • maple syrup

Method

 
1. Separate the eggs. Make the batter as for the drop scones, adding only the yolks to the batter. 2. Meanwhile, heat the waffle iron and brush with melted butter. Whisk the egg whites until stiff but not dry and fold into the batter. 3. Pour batter into one side of the waffle iron, covering 3/4 of the surface. Close and cook for ± 30 seconds or until golden on both sides. Cooking time will depend on whether you prefer crisp, golden waffles or pale, soft ones. TO SERVE 4. Remove the waffles from the waffle iron and serve warm with toppings. Makes 4.
