Velvet pudding

    cake flour

    eggs, separated

    hot milk
  • 10

    vanilla essence
  • 50
    ml
    butter
  • 25
    ml
    apricot jam
  • 50
    ml
    castor sugar
 

Method

Preheat the oven to 180 ºC and spray a fairly large flat glass dish with non-stick spray or butter lightly. Combine the sugar, cake flour and salt, Beat the egg yolks until light and add the milk, vanilla essence and butter. Gradually add to the flour mixture while stirring continuously. Pour into a heavy-based saucepan and heat slowly, stirring continuously until the mixture simmers and is cooked through. Pour the mixture into the glass dish, spreading evenly. Leave until firm. Melt the jam and spread over the custard mixture. Beat the egg whites until foamy and add the castor sugar a spoonful at a time, beating until stiff. Spoon over the jam layer. Bake for about 10 minutes until the meringue is golden brown and cooked. Serves 6.
