Velvet pudding

    apricot jam

    castor sugar
 

Method

 
Preheat oven to 180 ºC (350 ºF). Combine the sugar, flour and salt in a mixing bowl. Beat the egg yolks until pale and add the milk and vanilla essence. Slowly add to the flour mixture, stirring continuously. Add the butter, place in the microwave and cook on 100 percent power for 9 minutes or until the mixture begins to thicken. Stir well every 3 minutes. Pour into a greased 27 cm diameter serving dish and microwave for another minute on 100 percent power. Microwave the jam for 1 minute on 100 percent power. Spread on top of the custard mixture. Beat the egg whites until peaks form, then add the castor sugar a spoonful at a time. Beat until stiff. Spread on top of the jam. Bake in an ordinary oven for 10 minutes or until the meringue is pale brown. Serves 6.
