Vegetarian tomato stew

  • oil for frying
  • 2
    onions, sliced
  • 1
    red pepper, seeded and diced
  • 2
    cloves garlic, crushed
  • 4
    large ripe tomatoes, skinned and cubed
  • 200
    g
    tomato and onion soya mince
  • 800
    ml
    boiling water (you may need more)
  • 30
    ml
    sugar
  • 5
    ml
    mixed herbs
  • salt and pepper
  • 4
    potatoes, peeled and cubed
 

Method

 
Sauté the onion, peppers and garlic in a little oil until soft. Add the tomatoes and simmer until a sauce has formed. Add the soya mince and boiling water. Simmer until soft, regularly adding water if necessary. Add the remaining ingredients and simmer until the potatoes are done. Serve with rice.
