    courgettes, rinsed and coarsely grated

    whole kernel corn

    Cheddar cheese, grated

    oil

    large eggs, beaten

    self-raising flour
  • 50
    ml
    finely chopped fresh parsley
  • 5
    ml
    paprika
  • 2
    ml
    salt
  • freshly ground black pepper
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a 21 x 21 x 5 cm ovenproof dish with margarine. Combine the grated courgettes, whole kernel corn, onion and Cheddar cheese in a mixing bowl. Blend the oil and eggs, and add to the self-raising flour. Add the vegetables and season with the parsley, paprika, salt and pepper to taste. Pour into the prepared dish and bake for 40-45 minutes or until the dish is set and golden brown. Serve hot or cold with a salad. Serves 6.
