Vegetarian couscous

    vegetable stock
  • 2

    each cinnamon, paprika and ginger
  • 4
    courgettes, cut into quarters

    baby corn, trimmed
  • 200
    g
    beans, trimmed
  • 410

    chickpeas, drained
  • 300
    g
    couscous
  • 30
    ml
    butter
  • 35
    ml
    honey
  • 2
    onions, sliced
  • 1
    red pepper, cut into thin strips
 

Method

Place the vegetable stock and spices in a saucepan and bring to the boil. Add courgettes, corn, beans and chickpeas and boil for 5 minutes. Remove vegetables from pot and keep warm. Add couscous to the boiling stock. Remove from the heat, cover and allow to stand for 5 minutes. Meanwhile, heat butter and honey in a saucepan. Add onion and red pepper and cook over medium heat until golden brown. Serve couscous topped with warm vegetables and honeyed onion and pepper mixture. Serves 4.
