Vegetarian chilli stew

    red lentils

    olive oil

    large onion, finely chopped

    cloves garlic, crushed

    chilli powder

    ground cumin
  • 5

    cayenne pepper
  • 5
    ml
    ground cinnamon

    chopped tomatoes
  • 500
    ml
    vegetable stock
  • 410
    g
    sugar beans, rinsed and drained
  • 820
    g
    chickpeas, rinsed and drained
  • 410
    g
    whole kernel corn, drained
  • 65

    tomato paste
 

Method

 
1. Cover the lentils with water and soak for about 25 minutes. Drain. 2. Heat the oil in a large saucepan and sauté onion and garlic until transparent. Add chilli powder, cumin, cayenne pepper and cinnamon. Cook for 2 minutes, stirring occasionally. 3. Add lentils, tomatoes with their liquid, stock, sugar beans, chickpeas, corn and tomato paste. Bring to the boil and simmer for 10 minutes, stirring occasionally. 4. Serve with fresh crusty bread rolls.
