Ingredients (14)

180.00 ml lentils — red
30.00 ml fresh chillies — 573
1.00 onion — finely chopped
2.00 garlic — cloves, crushed
5.00 ml chillies — powder
10.00 ml cumin — ground
5.00 ml cayenne pepper
5.00 ml cinnamon — ground
820.00 g tomatoes — chopped
500.00 ml stock — vegetable
410.00 g sugar beans, drained — rinsed
820.00 g chickpeas — tinned, drained and rinsed
410.00 g sweetcorn — tinned, drained
65.00 g tomato paste

Method:

1. Cover the lentils with water and soak for about 25 minutes. Drain.
2. Heat the oil in a large saucepan and sauté onion and garlic until transparent. Add chilli powder, cumin, cayenne pepper and cinnamon. Cook for 2 minutes, stirring occasionally.
3. Add lentils, tomatoes with their liquid, stock, sugar beans, chickpeas, corn and tomato paste. Bring to the boil and simmer for 10 minutes, stirring occasionally.
4. Serve with fresh crusty bread rolls.
