Ingredients (6)

0.00 garlic — cloves, crushed
400.00 g green beans — trimmed and halved
2.00 yellow pepper — deseeded and sliced
400.00 g courgettes — julienned
0.00 plum tomatoes — chopped
50.00 ml fresh basil — shredded

Method:

Heat the oil in a saucepan.

Add the garlic and sauté until it is a pale golden colour.

Add the beans and stir to coat in the oil.

Cover with a lid and allow to simmer over a medium heat for five minutes.

Add the peppers and simmer for a further two minutes.

Add the remaining ingredients and simmer, uncovered, for 10 minutes.

Season with salt and freshly ground black pepper.

Serve hot.
