Vegetable stew on phutu

    turmeric

    ground cumin

    paprika

    clove garlic, crushed

    tomato paste
  • 500
    g
    vegetable medley
  • 350
    ml
    vegetable stock
  • 500
    ml
    cooked phutu pap (see tips)
 

Method

 
1. Heat oil in a large pan and sauté onion over medium heat, until golden. 2. Add turmeric, cumin, paprika, garlic, ginger and tomato paste. Cook for 1 minute, add vegetables and stir to coat with spices. 3. Add stock and bring to the boil. Reduce heat and simmer, partially covered for 30 minutes, until tender. 4. Serve warm on phutu.
