Ingredients (11)

30.00 ml oil
1.00 onion — sliced
5.00 ml turmeric
10.00 ml cumin — ground
5.00 ml paprika
1.00 garlic — cloves, crushed
15.00 ml fresh ginger — crushed
15.00 ml tomato paste
500.00 g vegetables
350.00 ml stock — vegetable
500.00 ml maize meal — cooked

Method:

1. Heat oil in a large pan and sauté onion over medium heat, until golden.
2. Add turmeric, cumin, paprika, garlic, ginger and tomato paste. Cook for 1 minute, add vegetables and stir to coat with spices.
3. Add stock and bring to the boil. Reduce heat and simmer, partially covered for 30 minutes, until tender.
4. Serve warm on phutu.
