Vegetable soup

Ingredients

    ml
    olive oil
  • 2
    onions, chopped
  • 4
    carrots, chopped
  • 1
    butternut, peeled and cubed
  • 3
    potatoes, peeled and cubed
  • 1.50
    Litres
    vegetable stock
 

Method

20 mins
 
Heat oil in a saucepan and sauté onions until soft.
Add vegetables and stock and simmer until tender.
Season to taste.
Place soup in a food processor and blend until smooth.
Serve with croutons or bread.

Variations:
Make your own croutons by slicing bread into thick slices and then into cubes, using a French loaf if available.
Lightly sauté the cubes in butter until crisp or brush them with olive oil and place under the grill until lightly browned.
For a meaty flavour, cook bacon until crisp, add the bacon to the soup, and sauté the croutons in the bacon fat.
