Vegetable salad with pork fillet

    pork fillet
  • 2
    Nomu pork rub
  • Handful fresh sage leaves
  • Mixed green lettuce leaves
  • Cocktail tomatoes
  • Israeli little cucumber sliced on a mandolin
  • Celery finely sliced on mandoline
  • Yellow pepper, sliced
  • Mushrooms, sliced
  • Olives
  • 2
    eggs, hardboiled
  • Carrots, finely julienned
  • Avocado, sliced
  • Dressing:
  • Olive Oil
  • Good quality balsamic
  • Verlaque with pomegranate
  • 1
    Dijon mustard
  • Salt and pepper to taste

Salad and Pork:
Slice pork fillet.
Fry in Nomu pork rub and a handful of fresh sage leaves.
Boil eggs till hard, remove shells and slice.
Slice and chop other vegetables and layer in a bowl.
Top with pork.

Mix all the dressing ingredients together.
Serve over salad.
