Vegetable quiches

    g
    rich shortcrust pastry
  • FILLING
  • 100
    g
    frozen mixed vegetables
  • 2
    ml
    cumin seeds
  • salt and black pepper
  • 15
    g
    Cheddar cheese, grated
  • 1
    egg
  • 125
    ml
    milk or cream
 

Method

 
1. Prepare pastry, line tartlet tins, prick bottoms well with a fork. Relax in fridge until needed. 2. Mix vegetables, seasonings and cheese together. Place spoonfuls in tartlets. 3. Beat egg with milk or cream and pour over vegetables (enough to just cover vegetables). 4. Place on a baking sheet and bake at 180 ºC for 8 to 10 minutes or until set. Serve warm with a light sprinkling of Parmesan cheese.
