Vegetable platter

  • baby potatoes
  • fresh button mushrooms
  • cucumber
  • cherry tomatoes


1. Wash and score a cross into potato skins. Place on a baking tray and bake in an oven preheated to 200 ºC for about 30 minutes. Squeeze potatoes on the side with finger tips to open scored cross and fill with a dollop of salmon ricotta topping (see recipe). 2. Remove the stems from the mushrooms, halve and remove seeds from tomatoes, cut the cucumber into 1 cm thick slices and hollow out with a spoon. Pipe either salmon cream cheese spread or salmon ricotta topping (see recipes) into the vegetables, garnish with coriander leaves or chopped chives.
