Ingredients (12)

50.00 ml margarine
60.00 g flour — cake
375.00 ml milk
250.00 ml mixed vegetables — frozen
500.00 ml rice — cooked
5.00 eggs — hard-boiled and finely chopped
25.00 ml fresh parsley — chopped
5.00 ml curry powder
salt and freshly ground black pepper — to taste
1.00 eggs — beaten
breadcrumbs
oil — for deep frying

Method:

Make a white sauce: Melt the margarine in a large saucepan. Add the cake flour and stir well. Cook for 1 minute. Heat the milk slightly and add small quantities at a time to the cake flour mixture in the saucepan. Stir well. Heat until the mixture comes to the boil and thickens. Remove from the stove.
Pour boiling water over the frozen vegetables, leave for 5 minutes and drain well. Add to the white sauce, along with the remaining ingredients, except the crumbs and oil. Shape the mixture, which is fairly soft, into hamburger patties and roll in the crumbs. Place on a baking sheet and chill for 30 minutes. Deep-fry until golden brown. Drain on paper towelling and serve with a salad and tomato sauce.
Makes 15 patties.
