Vegetable pasta

Ingredients

  • 500
    g
    pasta, cooked according to packet instructions
  • 30
    ml
    olive oil
  • 1
    onion, peeled and cubed
  • 250
    g
    mushrooms, cleaned and sliced
  • 250
    g
    cooked gammon or fried bacon bits (optional)
  • 250
    ml
    grated cheddar cheese
  • 250
    ml
    cream
  • 250
    g
    baby Rosa tomatoes, some halved and some whole
  • 250
    g
    mange tout
  • salt and freshly ground pepper
 

Method

15 mins
 
Heat the oil in a large saucepan over medium heat and fry the onion until soft and fragrant.
Add the mushrooms and optional bacon or gammon and fry over medium heat until browned.
Add the cream and cheese and heat until the cheese has melted.
Add the tomatoes, mange tout and pasta. Season with salt and pepper and heat through. Serve hot.
