Vegetable pasta

Crispy and crunchy veggies with squiggles of pasta: yum!

Ingredients (10)

courgettes
yellow pepper
baby tomatoes — halved
handful fresh oregano
handful fresh basil
mushrooms
3 Tbs pesto — tomato
olive oil — for frying
parmesan — shavings
salt and freshly ground black pepper

Method:

Chop vegetables very finely.
Cook pasta according to the instructions.
And flash fry in pan along with the herbs and pesto (do not fry fro longer than a few minutes).
Put veggies on top of the pasta and sprinkle with parmesan shavings.
Season to taste.
