    finely chopped onion

    butter

    self-;raising flour

    salt

    mixed herbs

    freshly chopped parsley

    coarsely grated carrots and courgettes
  • 250
    ml
    grated cheese
  • 200
    ml
    coarsely chopped pecan nuts

    extra-;large eggs
  • 65

    plain yoghurt or buttermilk
 

Method

 
Preheat the oven to 180 °C. Grease a medium-sized loaf tin or spray with non-stick spray. Sauté; the onion in the butter until tender. Sift the self-raising flour and salt together. Add the herbs, parsley, carrot and courgette mixture, cheese and nuts. Beat the eggs and yoghurt together. Sprinkle the flour mixture over the vegetable mixture, add the egg mixture and mix to bind the ingredients, taking care not to overmix. Turn the mixture into the prepared loaf tin and bake for about 40 minutes or until a testing skewer comes out clean when inserted into the centre of the loaf. Serve with cheese pâté; (see recipe). Makes one loaf.
