    cake flour
  • 10
    ml
    baking powder
  • 5
    ml
    salt
  • 2
    extra-large eggs
  • 125
    ml
    milk
  • 500
    ml
    frozen green beans, defrosted and cooked until just tender
  • 6
    spring onions, sliced
  • 1
    tomato, chopped
  • basil
  • cayenne pepper
  • oil for frying
 

Method

 
Sift the dry ingredients together. Beat the eggs and milk together, add to the dry ingredients and mix well. Add the green beans, spring onions (or use 1 small onion, chopped) and tomato and season to taste with basil and cayenne pepper. Mix well. Pour sufficient oil into a saucepan for deep-frying. Drop spoonfuls of the batter into the hot oil and fry until browned on the outside and cooked inside. Drain on kitchen towelling. Makes about 17 fritters.
